Mediterranean Wraps

I came up with the recipe on whim, trying to find something filling, healthy, and easy to throw together. Try this out for your next breakfast or lunch.

Ingredients

  • Sandwich wraps

  • Chicken sausage (I used Trader Joe’s Italian style)

  • Hummus (I used roasted garlic)

  • Kalamata Olives

  • Roasted red peppers

  • Sun dried tomatoes (no oil)

  • Spinach

  • Red onion - sliced

  • Feta cheese - crumbled

  • Parsley

  • Lemon for serving

Recipe Steps:

  1. Cook chicken sausage as instructed on package. I put them in my air frier for around 8 minutes.

  2. While the sausage cooks prep ingredients that may need slicing - onion, roasted red pepper, parsley

  3. Lay out your wraps, spread one side with hummus.

  4. Place fresh ingredients on top - spinach, red pepper, sun-dried tomatoes, olives, red onion, parsley, and feta crumbles.

  5. Once sausage is done cooking place in the wrap. Squeeze lemon on top, wrap up , and enjoy!
